Question about 2001 BMW 325

I have a 2003 X5 3.0 BMW that is experiencing the compressor to turn on and off while the outside temp is 85 and setting inside is 65

Compressor is not running all the time , it's only comes on when temperature in the cabin drops below desired .
If you don't have problem with cold air in the cabin , then it's normal . If you don't get cold air , then your car may be low on freon (may have leak some were ).

Why does it turn on the A/C compressor when the recirculate button is depressed and turned on?

Its programmed that way. Recirculation keeps the cold air inside the car. Where as vent draws air from the outside. It's normal, but you can turn the temp control to warmer if you want it to stay that way.

Compressor does not engage when ac is turned on.

If the system is low or has no Freon, the clutch will not engage. Hook up a pressure tester on the low pressure line valve. It should read 30 psi at 65 degrees outside temperature and 50 psi at 85 degrees outside temperature. If there is pressure, then it could be a fuse or AC relay. If there is no pressure, then add freon with some pag oil, plus a leak dye will have to be added to the system from the low pressure valve. Only add 1 16 Oz. can to not over pressurize the system. If the clutch engages, then check for a leak. I would recommend taking this job to a qualified technician, since he would have the necessary equipment to put the system at a vacuum of -30- To empty the system and check for a leak.

Only getting warm air from a/c.

low on freon does the compressor cycle on and off alot? or the temp acuator isnt working or compessor failure i wd ck the presurres 1st if the low and high press. is close 2 the same its the compressor

AC blows warm. fan + compressor don't seem to engage.

The system could be low on refrigerant. The A/C pressure switch will not let the compressor run if the system pressure is below 28psi or above 455psi to protect the compressor from damage. At low pressures not enough oil (mixed in with the refrigerant) will circulate, and at high pressures, the compressor seals will likely blow. You can get a set of A/C manifold gauges for R-134a and check the system pressures yourself or get a shop to check it and possibly add some R-134a. If the system pressure checks good, then the A/C pressure switch, the compressor clutch, or some relays will need to be checked.

How do you set the outsite temperature guage?

It does it automatically on its own, depending on the air temp outside. Don't be alarmed if you live in a cold climate as it will sound an alarm if it gets down to 3 degrees as well to warn you it could be freezing outside.

2001 Gmc yukon xl a/c blowing hot most of the time but some times blows cool for a little while. pressure gage shows 100+ when I am told this should be between 25-65. The compressor does not seem to be...

the earlier GM trucks had a problem with the a/c systems
Compressors are junk, but this will usually break the a/c belt, and make a horrible noise right before that.
the pressure you have listed is not much help, there is a high and low side pressure. If they are both the same, then the compressor is not on or is not pumping (broke). The early yukons/suburbans/tahoes also had a problem with the a/c cycling switch. If yours has a brown band, replace it.

At Idle (depending on outside temp) Low pressure should be about 40 psi at idle and high side about 220....again this can change greatly by outside temp.
Another thing you may want to look at is of course a leak in the system, make sure its fully charged, and check the fan clutch.
