You are putting too much pressure and overloading (motor) the Mixer. Specially if you run it for long time.
Grating cheese is hard on mixers.

Let it rest and turn it back on, ON LOW and little or no load.

If the bolt is the hinge pin that the head swivels on when tilting it up, it can be pushed back in when the head latch is released and the mixer head is lifted slightly.

If the beaters are hitting the bottom of the bowl, try adjusting the upper-head stop-screw located near the top of the lower stand--it determines how far the head drops down and therefore, the height of the beaters above the bowl bottom. Hope this helps!

I assume you mean that the top half of the mixer, above the pivot pin, moves with respect to the lower half of the mixer, the stand part. There is a pin on which the top half pivots which becomes loose.

Turn the mixer over and look up where the pin goes through the two pieces. There is a screw there which secures the pin. Tap the pin into position and tighten the screw.

Check that you have put the carbon brushes in correctly, they are "keyed" on one corner so will only work one way. Look in the hole with a torch to see the blocking corner in the bottom.

That sounds like you have broken a shear pin. These pins are through a spindle and shear off if too much load is put on the drive train. There is enough grip to turn the beater under no load, but the spindle or gear spins under load. look for a small silver pin through one of the drive cogs.

Without knowing which model mixer you have I cannot be specific as there are 5qt models with very different motors. Parts are available and the mixer can be fixed. Doing it yourself makes it much more affordable.

Service Manuals covering the two types can be found at:

Professional 5/6 quart:

4.5/5 quart:

The adjustment procedure is the same and there are springs on the two adjustment bolts. Thereafter, things are very different on the K45.
No speed or torque can be caused by:
1. Bad brushes, or most likely
2. A bad resistor. There are three wires on the resistor. It should read 190 ohms (or there about) across the red and white wires and 95 ohms (or there about) across the black wire and either of the other two.
3. A bad field coil (stator).
4. A bad armature.

A replacement resistor, field core, and armature are extremely difficult to find.

The Service Manual for the K45 and K5A can be found in the files section of WACEM, you just have to sign up to the site:
http://groups.yahoo.com/group/WACEM/

Look for "K5-A, K45 Original Service Manual"
